Not pizza, but...

Pizza will probably come back into my life again, at some point, but right now, I'm on low enough carbs that I can't afford it. And... well, honestly, I could have pizza if I eat it right before exercising, but pizza is like popcorn... it's one of those foods that is for the pleasure of eating and relaxing, not eating and remembering to get on the treadmill in 30-45 minutes.
Still...
Take pepperoni slices. Fry them gently in a pan until you get some of the grease off and they're not yet crispy.
Put them on a baking sheet. Cover them with just a touch of pizza sauce.
Cover the sauce with slices of provolone, or, if you prefer, mozzarella. (I prefer provolone.) And, if you're an anchovy lover, put your anchovies on top of the cheese. Bake it.
Yes, put slightly cooked pepperoni, covered in sauce and cheese (and anchovy) on a baking sheet and bake it! 350, about 10-15 minutes. Or, you can go a bit hotter, but be careful because the difference between "done" and "burned cheese" is relatively small. (If you want burned cheese, that's good too - but the difference between "burned cheese" and "an inedible mess" can also be pretty small.)
Alas, you can't slice it in 8ths or 10ths or 12ths (I usually slice my pizzas in 10 slices - I'm sure you all know why), and pick it up, but the flavor is still awfully good.
