So, the worst part of a low carb diet is "no pizza". Pizza will probably come back into my life again, at some point, but right now, I'm on low enough carbs that I can't afford it. And... well, honestly, I could have pizza if I eat it right before exercising, but pizza is like popcorn... it's one of those foods that is for the pleasure of eating and relaxing, not eating and remembering to get on the treadmill in 30-45 minutes.

Still...

Take pepperoni slices. Fry them gently in a pan until you get some of the grease off and they're not yet crispy.

Put them on a baking sheet. Cover them with just a touch of pizza sauce.

Cover the sauce with slices of provolone, or, if you prefer, mozzarella. (I prefer provolone.) And, if you're an anchovy lover, put your anchovies on top of the cheese. Bake it.

Yes, put slightly cooked pepperoni, covered in sauce and cheese (and anchovy) on a baking sheet and bake it! 350, about 10-15 minutes. Or, you can go a bit hotter, but be careful because the difference between "done" and "burned cheese" is relatively small. (If you want burned cheese, that's good too - but the difference between "burned cheese" and "an inedible mess" can also be pretty small.)

Alas, you can't slice it in 8ths or 10ths or 12ths (I usually slice my pizzas in 10 slices - I'm sure you all know why), and pick it up, but the flavor is still awfully good.

Oh, and just in case someone doesn't get the joke at the end.

I cut my pizzas into ten slices (if they're big enough), because 8 isn't enough pizza for the work I did in making it, but 12 is just *far* too many slices of pizza to have around!

not doing low carb or anything but I keep meaning to try the butter nut squash 'lasagna' (slices of roasted squash for pasta) because it looks nummy and that might approximate thin crust...

There was a place down near my mom's that made a low-carb "pizza" using flattened chicken breasts in place of the crust. I've never tried it myself, but it seems like it ought to work pretty well.

Cruised over here from brooksmoses, because I instantly fell in love woth someone who writes about patching jeans and the "structural integrity" of fabric. That is so totally the way I would say it! Anyway - my son and his fiancé are on low carb and have found a pizza crust recipe made of cauliflower - sounds improbable, I know, but they swear it's even better than regular crust. If you're interested, I'll ask for it - I haven't myself because I cook only Korean food lately, and there's not a lot of pizza in my menu. ;)
