Good news and bad...
Mar. 30th, 2003 09:33 pmThe good news: as I recalled, placing tomatos in boiling water *does* make them peel easily, but I think you need to peel them right away. It didn't matter, because I was cooking them anyway, but if you wanted raw tomatos, I think you'd need to be more careful.
Oh, right, that's not the *good* news, really, but it is nice. The real good news is that mixing two plum tomatoes with a cup of onion, a cup of lentils, four chunks of garlic, pressed, some olive oil, garam marsala (or however that Indian seasoning is spelled), some ginger, a splash or two of beer (I don't think I really needed that, but hey...) and a little lemon pepper (I decided it needed some lemon, and I only had lemon pepper for lemon bits), simmered in water, makes a tasty little dish.
I think it's probably able to be called "dhal", but I don't know who gets to judge that. Also, I think if I did this again, I'll simmer the tomato, onion, and garlic in olive oil first, then add the (soaking) lentils... or start cooking the lentils and add the mixture later.
