In case you needed to hear it, fresh salmon is most emphatically better from frozen. I'm glad I asked for a large filet....

(Frozen isn't *bad*. I'm just very glad I was tempted by the better-than-frozen price on fresh this week.)

Pan seared is especially good, though if you're shy the cast iron, I reckon baked would be quite tasty.

So jealous. The other day when Cassie and I were shopping, we found salmon steaks stuffed with crab - 2 for $10 - and they looked and smelled amazing. We bought them, because ever since Cassie's moved back from AK, she's had a serious salmon withdrawal happening.

OMG, it was so good. I was really disappointed that I could eat less than half of mine, but she didn't mind in the slightest. ;-)

oh yum! (For frozen, I'm most likely to bake it, usually with white wine if I have any, lemon or lime juice, grated ginger...)
